Happy Thanksgiving!!  
Today seems like the appropriate day to share my latest and greatest dinner time dishes.  Lately, I’ve been trying to seek out healthy yet delicious dinner time options to get me to my ideal weight.  Check out my dishes below:
Roasted Chicken and Italian Marinated Vegetables (Left) and Barbecue Chicken with Steamed Broccoli (Right)

Curry Chicken with a side of Rice & Peas.

Herb Marinated London Broil with Mushroom Sauce over white Rice.

Mushrooms, Brussels Sprouts, Poached Salmon, and Beef Bacon in preparation for the dish below.

Salmon Croquette (aka Salmon Patties), Mashed Potatoes and Roasted Brussels Sprouts with Mushrooms.

  2. Do you have a Caribbean connection? LOL. Just curious….My parents are from the Caribbean and Rice & peas is generally cooked as shown in your Photo. Brought back memeories.


  3. My parents are too! And that's the only way I'm willing to eat my rice, lol. I'd been working on Grandma's recipe(which is a little bit of this and a little bit of that) and I think I've finally got a knack for it. I love her cooking — the best.
