Italian Chicken Lettuce Cups

I saw this recipe for Italian Lettuce Cups in a recent issue of Glamour Magazine and since I’ve been trying to find recipes to add to my rotation, I decided to give them a try. There was no stove top work required and only required one bowl (read: easy clean up).  We gave them a try this weekend and they were pretty good.  It reminded me of chicken salad, but with a lot less mayonnaise — a nice low carb/fat treat.  Although my husband would have preferred to eat them on a cracker or with bread, he enjoyed them as well.

Step 1: Add a 1/2 cup Italian dressing, 1/4 cup fat free mayonnaise, 2 tsp sugar, 1/4 cup chopped parsley, 1/2 cup canned cannellini beans, 1/4 red onion thinly sliced, and store-bought roasted chicken shredded to a bowl and mixed.
Step 2: Allow the flavors to marinate for at least an hour in the refrigerator.

Step 3: Place a spoonful of the chicken mixture onto a piece of lettuce with a small slice of jarred roasted bell peppers for garnish and enjoy!

Makes 6 servings.
